32 oz frozen tater tots
1 tablespoon olive oil
1 pound ground beef
1 packet taco seasoning
1/2 cup water
8 oz shredded cheddar cheese
8 oz shredded Monterey Jack cheese
1/2 cup prepared nacho cheese sauce (queso)
1/2 cup black beans, rinsed and drained
1/4 cup sliced jalapeños (from a jar)
1/4 cup diced tomatoes
2 tablespoons chopped green onion
Sour cream, for topping
Salsa, for serving
Instructions
Preheat your oven to 425 degrees Fahrenheit. Spread the frozen tater tots in a single layer on a large baking sheet. Drizzle with olive oil.
Bake the tater tots for 15 to 20 minutes, flipping halfway through, until they are golden brown and crispy.
While the tots bake, prepare the beef. In a skillet over medium heat, cook the ground beef until browned. Drain off any excess fat.
Stir the taco seasoning and water into the cooked ground beef. Bring to a simmer and cook for 3 to 5 minutes, or until the sauce has thickened slightly.
Remove the baking sheet of crispy tots from the oven. Increase the oven temperature to 400 degrees Fahrenheit.
Layer the toppings over the tots. Sprinkle half of the cheddar and Monterey Jack cheese over the tots. Spoon the seasoned ground beef evenly over the cheese layer.
Top with the remaining shredded cheese, black beans, and sliced jalapeños.
Return the sheet pan to the oven and bake for 5 to 8 minutes, or until the cheese is fully melted and bubbly.
Remove from the oven. Drizzle the prepared nacho cheese sauce (queso) over the top. Garnish with diced tomatoes and chopped green onion.
Serve immediately with sour cream and salsa on the side.
Notes
For extra crispy tots, you can air fry them instead of baking. Cook at 400 degrees Fahrenheit for about 12 minutes, shaking the basket halfway through.
If you prefer a different meat, substitute ground turkey or chorizo for the ground beef.
You can assemble the tots and meat on an oven-safe platter instead of a sheet pan for easier serving at a party.
