6 tablespoons unsalted butter
1 cup creamy peanut butter
1 (10 ounce) package miniature marshmallows
6 cups crispy rice cereal
1 cup semi-sweet chocolate chips
1 teaspoon coconut oil (optional, for drizzling)
Instructions
Lightly grease a 9×13 inch baking pan or line it with parchment paper, leaving an overhang for easy removal.
In a large saucepan over medium-low heat, melt the butter.
Add the peanut butter to the melted butter and stir until fully combined and smooth. Remove the pan from the heat.
Add the marshmallows to the peanut butter mixture. Stir constantly until the marshmallows are completely melted and smooth. This step is key for chewy treats.
Pour the crispy rice cereal into the marshmallow mixture. Fold gently until the cereal is evenly coated. Do not overmix.
Transfer the mixture to the prepared pan. Lightly press the mixture into the pan using a piece of wax paper or lightly buttered spatula. Do not pack it down hard, as this makes the treats hard.
In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth.
Drizzle the melted chocolate evenly over the top of the pressed treats.
Let the treats cool completely at room temperature, about 1 hour, before cutting into squares.
Lift the treats out of the pan using the parchment overhang and cut into bars.
Notes
For the chewiest result, use fresh marshmallows and stir the mixture off the heat once the marshmallows are melted.
If you prefer a Scotcharoo style, melt 1/2 cup of butterscotch chips with the chocolate chips for the topping.
You can use crunchy peanut butter for added texture if you prefer.
