Ingredients

Scale
  • 2 cups cooked chicken breast, shredded or diced
  • 1/2 cup plain Greek yogurt (for creaminess without mayo)
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • Optional additions: 1/4 cup crumbled bacon, 1/2 avocado diced

Instructions

  1. Place the cooked chicken in a medium mixing bowl.
  2. In a separate small bowl, whisk together the Greek yogurt, Dijon mustard, honey, apple cider vinegar, onion powder, garlic powder, salt, and pepper until the dressing is smooth.
  3. Pour the honey mustard dressing over the chicken.
  4. Add the chopped celery and red onion to the bowl.
  5. If using, gently fold in the bacon or avocado pieces.
  6. Mix all ingredients until the chicken is evenly coated.
  7. Taste the salad and adjust seasoning if needed.
  8. Serve immediately, or cover and chill for at least 30 minutes for best flavor. This is a great high protein lunch option.

Notes

  • For a tangier flavor, substitute 1 teaspoon of the Dijon mustard with whole grain mustard.
  • This recipe is naturally gluten-free. For a dairy-free version, replace Greek yogurt with a thick, plain, unsweetened dairy-free yogurt alternative.
  • Prepare the chicken ahead of time by baking or poaching chicken breasts.
  • Use this mixture as a chicken salad sandwich filling or serve over fresh greens for a low-carb meal.
