Make this simple Gochujang Chicken for a quick dinner. It features tender chicken coated in a sticky, sweet, and spicy glaze using gochujang and honey. This recipe is ready fast and pairs well with rice.

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup gochujang (Korean chili paste)
  • 3 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/4 cup water or chicken broth
  • Optional: Sesame seeds and sliced green onions for garnish

Instructions

  1. Prepare the chicken by cutting it into uniform, bite-sized pieces. Pat the pieces dry with paper towels.
  2. Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
  3. Reduce the heat to medium. Add the minced garlic and grated ginger to the skillet. Cook for about 30 seconds until fragrant. Do not let the garlic burn.
  4. In a small bowl, whisk together the gochujang, honey, soy sauce, rice vinegar, sesame oil, and water or broth to create the sauce.
  5. Pour the sauce mixture into the skillet. Bring it to a gentle simmer, stirring constantly until the sauce thickens slightly, about 2 minutes.
  6. Return the cooked chicken to the skillet. Toss the chicken pieces thoroughly to coat them completely in the sticky gochujang sauce. Cook for 1-2 minutes until the sauce clings to the chicken.
  7. Remove the skillet from the heat. Serve the sticky honey gochujang chicken immediately over steamed rice. Garnish with sesame seeds and sliced green onions if desired.

Notes

  • For a crispier texture, you can lightly dust the chicken pieces in cornstarch before browning them in step 2.
  • If you prefer less heat, reduce the amount of gochujang by one tablespoon and add one extra teaspoon of honey.
  • This dish works well with chicken thighs for extra moisture, or chicken breasts for a leaner option.
