  • 1.5 lbs baby potatoes, halved or quartered

  • 4 cloves garlic, minced

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine the potatoes, 2 tablespoons of olive oil, half of the minced garlic, Italian seasoning, salt, and pepper. Toss until the potatoes are evenly coated.
