For the Vinaigrette:
1/4 cup apple cider vinegar
2 tablespoons pure maple syrup
1 tablespoon Dijon mustard
1/2 cup olive oil
1/4 teaspoon salt

Instructions
Preheat your oven to 400°F (200°C). Toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 20 to 25 minutes, or until tender and lightly browned. Let the squash cool slightly.
While the squash roasts, prepare the vinaigrette. In a small bowl or jar, whisk together the apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper. Slowly whisk in the 1/2 cup of olive oil until the dressing emulsifies.
In a large bowl, combine the mixed greens, cooled roasted butternut squash, sliced apples, dried cranberries, and toasted pecans.
