1 small yellow onion, finely chopped
2 cloves garlic, minced
1 cup long-grain white rice, uncooked
2 cups chicken broth
1 teaspoon salt
1/2 teaspoon black pepper
1/2 cup milk
4 ounces cream cheese, cut into cubes
2 cups shredded sharp cheddar cheese
1/4 cup grated Parmesan cheese
Instructions
Melt the butter in a medium saucepan over medium heat. Add the chopped onion and cook until soft, about 5 minutes.
Add the minced garlic and cook for 1 minute until fragrant.
Add the uncooked rice to the saucepan and toast for 2 minutes, stirring constantly.
Pour in the chicken broth, salt, and pepper. Bring the mixture to a boil.
Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
Remove the saucepan from the heat. Stir in the milk and the cubed cream cheese until the cream cheese melts and the mixture becomes creamy.
Stir in the shredded cheddar cheese and Parmesan cheese until fully melted and combined, creating a gooey texture.
Serve the cheesy rice warm immediately as a side dish or main course.
Notes
For an extra savory flavor, use half chicken broth and half vegetable broth.
