  • For the Glaze (Optional): 1/2 cup powdered sugar, 1-2 teaspoons milk

Instructions

  1. Prepare the Streusel: In a small bowl, combine the streusel flour, brown sugar, granulated sugar, and cinnamon. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs. Place the bowl in the refrigerator while you prepare the dough.
  2. Make the Cookie Dough: Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until combined.
  4. In a separate small bowl, mix the brown sugar and cinnamon for the swirl.
  5. Add half of the dry ingredients to the wet ingredients and mix on low speed until just combined. Add the milk and mix briefly. Add the remaining dry ingredients and mix until a soft dough forms. Do not overmix.
  6. Assemble the Cookies: Scoop rounded tablespoons of dough onto the prepared baking sheets, leaving space between them.
  7. Create the Swirl: Sprinkle the cinnamon-sugar mixture over the top of each dough ball. Gently press the swirl mixture into the dough slightly.
  8. Top with Streusel: Sprinkle a generous amount of the chilled streusel topping over each cookie.
  9. Bake: Bake for 10 to 13 minutes, or until the edges are lightly golden and the center is set. The streusel should look toasted.
  10. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  11. Glaze (Optional): Whisk together the powdered sugar and milk until smooth. Drizzle the glaze over the cooled cookies.
