1 (8 ounce) can refrigerated crescent roll dough
1/4 cup granulated sugar
1 tablespoon ground cinnamon
1/4 cup (1/2 stick) unsalted butter, melted
1/2 cup powdered sugar
2 tablespoons milk
1/4 teaspoon vanilla extract
Instructions
Preheat your oven to 375 degrees Fahrenheit. Lightly grease an 8×8 inch baking pan.
Unroll the crescent roll dough onto a clean surface. Do not separate the triangles. Gently press the dough together to form one large rectangle.
In a small bowl, mix the 1/4 cup granulated sugar and 1 tablespoon of cinnamon. Sprinkle this mixture evenly over the dough rectangle.
Starting from a long edge, roll the dough up tightly into a log.
Use a sharp knife or unflavored dental floss to cut the log into 1-inch thick slices. You should get about 12 to 16 pieces.
Place the cut pieces, cut-side up, into the prepared baking pan. They can touch slightly.
Melt the butter in a small saucepan or microwave-safe bowl. Drizzle the melted butter evenly over the dough pieces in the pan.
Bake for 12 to 15 minutes, or until the bites are golden brown and cooked through.
While the bites bake, prepare the glaze. Whisk together the powdered sugar, milk, and vanilla extract until smooth. Add more milk, one teaspoon at a time, if the glaze is too thick.
Remove the pan from the oven. Let the cinnamon roll bites cool in the pan for 5 minutes.
Drizzle the prepared glaze over the warm bites before serving.
Notes
For extra gooey cinnamon bites, pour 1/4 cup of heavy cream over the dough pieces before drizzling with butter prior to baking.
If you prefer a crispier exterior, you can cook these as air fryer cinnamon bites at 350 degrees Fahrenheit for 8 to 10 minutes, checking frequently.
You can substitute refrigerated biscuit dough for crescent rolls if you prefer a slightly denser texture.
