Make this simple dessert that combines the creamy peanut butter and chocolate of classic Buckeye candy with the crunch of graham crackers. This no-bake recipe is quick to assemble and perfect for family snacks or parties.

  • 1 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon shortening or coconut oil
  • 12 graham crackers (whole sheets)

Instructions

  1. In a medium bowl, mix the peanut butter and powdered sugar until fully combined and smooth. This forms your peanut butter filling.
  2. Break the graham crackers in half width-wise to create 24 square pieces.
  3. Place one graham cracker half on a clean surface. Spread about 1 teaspoon of the peanut butter mixture evenly over the graham cracker.
  4. Top with a second graham cracker half to create a sandwich. Gently press the edges together. Repeat until all crackers and filling are used.
  5. Place the assembled sandwiches on a baking sheet lined with parchment paper. Place the sheet in the freezer for 15 minutes to firm up the filling.
  6. While the crackers chill, prepare the chocolate coating. In a microwave-safe bowl, combine the chocolate chips and shortening (or coconut oil). Microwave in 30-second intervals, stirring well after each, until the chocolate is smooth and fully melted.
  7. Remove the chilled cracker sandwiches from the freezer. Dip each sandwich into the melted chocolate, ensuring most of the peanut butter layer is covered, leaving a small circle of the graham cracker visible, similar to a traditional Buckeye candy.
  8. Place the dipped crackers back onto the parchment-lined baking sheet.
  9. Refrigerate the Buckeye Graham Crackers for at least 30 minutes, or until the chocolate coating is set.
  10. Serve cold or store in an airtight container in the refrigerator.

Notes

  • For a slightly firmer peanut butter layer, you can chill the peanut butter mixture for 10 minutes before assembling the sandwiches.
  • If you prefer a thinner chocolate coating, add a little more shortening to the melted chocolate.
